At Jean Georges, I tasted the intensity of a world class kitchen at my fingertips. When I arrived I really had no idea what I would unravel. Over the course of a year I developed the speed, and the technique required to run through service in a breeze. It took months of frustration and patience but I kept telling myself it would be worth it and thanked God everyday for giving me this chance. Working lunch or dinner, it was always a rush of energy and a feeling that I will always remember. I felt so proud to work around such talented and skilled chefs and watched carefully and absorbed every detail I could. I learned how to work quite literally in an OCD manner, everything perfect, everything precise, every detail matters. And that lingered into everything I do today. I remember so vividly the anxiety of presenting anything to my head chefs. Was the plate hot enough? Was it salted properly? Did I leave the toast to crisp too long? Is the Fois overcooked? Is the garnish presented beautifully? What will they say next? The silence of 5 seconds for them to utter any word felt like forever. Hearing them yell and break apart the cook next to you knowing deep down that you could be next.
