On slowness
The pop-up is slow on purpose. One drink at a time, whisked to order, handed over with a word. It is not efficient and it is not meant to be.
Speed is easy to buy. Attention is not. We would rather serve fewer people well than more people quickly — because the thing people remember is not the matcha, it is that someone made it for them.
